Baked fresh vegetables will conquer the whole family with a rich, healthy and delicious. Prepare easy, and you can choose any of the pantry vegetables. Baked fresh vegetables are a great preparation, especially when you are out of ideas or ingredients.
- 2 bell peppers
- 7-9 baby carrots
- 1 tomato
- 2 courgettes
- 1 cup of peas
- 2 potatoes
- 1 bunch green onions
- 1 cup of broth
- 2 tablespoons of honey, olive oil
- salt and herbs to taste (oregano, thyme, basil, parsley, dill)
Cut all vegetables into cubes. Ideal is to cut them as close to the size of a pea. Put them in a pan or in a baking dish.
In a bowl place broth, honey, salt and spices, 4 tablespoons olive oil 4 tablespoons of water and mix well until smooth.
Add mixture over vegetables and place in pre heated oven tray for 45-50 minutes at 220 degrees.
Baked fresh vegetables can be served on a bed of couscous.
